So update on our little New Years “health kick”… It’s a daily battle, but we a found a little healthy alternative to our constant pizza cravings! Leetle zucchini pizza bites. They’re super easy to whip up as a snack or a lighter meal so here ya go!
This makes around 30 bites, depending on how thick you cut the zucchini
2 medium-large sized zucchini
salt/ pepper / garlic powder to taste
1 can tomato/marinara sauce
1 cup (or more if you wish) of grated mozzarella
1 pack of pepperonis (optional)
2 tbs of PANKO breadcrumbs (optional)
Preheat oven 350 degrees
Grease your pan
Cut zucchini about 1/4 inch thick
Sprinkle with seasoning
Dollop with tomato sauce
Place pepperoni on top of sauce
Bake 10-12 mins (the longer you bake the softer the “crust”)
Cool. Eat. Repeat.
HACK: sprinkle PANKO breadcrumbs if you need a little more crunch.
